Customer Story of Wacken Open Air

The mobile barbecue specialists are known for their unique delicacies prepared over beechwood fires that are rarely or nowhere else to be found. They offer rare dishes on sales stands at events and large-scale events throughout Germany and are also hired as caterers for company and private parties. The team are masters at show barbecues and offer a real gastronomic experience. With humour and charm, they draw the guests into amusing conversations and there is always an exuberant atmosphere - there is always the proverbial ‘pig’ going on.

Sau-saugut was founded by Arnt Schnicker-Roesenberger, a former IT businessman who turned his passion for cooking into a profession by specialising in grilling sows. He is supported by his wife Angela, who was also a former IT manager and trained in web design. Together, the couple have been offering their uniquely prepared sows at festivals and events throughout Germany for almost 7 years, placing particular emphasis on quality and traditional preparation.

The meat is characterised by an intense, aromatic flavour and a crispy rind. It stands out clearly from conventional pork and mainstream products such as pulled pork and offers an exceptional, original flavour. The traditional preparation and the beechwood fire give it a unique, smoky flavour. Only sows from small-scale farmers are used, which emphasises the excellence of the meat. While many people know how to prepare pork, only a few have mastered the complex art of original preparation.

Sau-saugut sources its meat for the Wacken Open Air from speciality butcher Meyerjürgens. Since 2022, they have also been offering customers oxen as an extension to their existing range - an absolute must! With the ‘Sau vom Spieß’ and ‘BBQ-Dampflok’ stalls, they ensure an unforgettable experience and culinary delights.

‘We grill one ox a day, that's about 460kg.’
